Tomato pomegranate salad

1 cup (200g) red cherry tomatoes, diced
1 cup (200g) yellow cherry tomatoes, diced
1 cup (200g) plum tomatoes, diced
4 medium (500g) vine tomatoes, diced
1 red pepper, diced
1 small red onion, finely diced
1 pomegranate, seeds removed

2 cloves garlic, crushed
1/2 tsp ground allspice
2 tsp white vine vinegar
1 1/2 tbsp pomegranate molasses
4 tbsp olive oil
1/3 tsp salt
1/3 tsp black pepper

Small oregano leaves
Olive oil, drizzled

Mix together the tomatoes, red pepper, and onion and set aside. In a separate dish, whisk the garlic, allspice, vinegar, pomegranate molasses, olive oil, and 1/3rd teaspoon of salt. Pour over the tomatoes and mix gently.

Arrange the tomatoes, pepper, and onion on a large flat plate. Sprinkle over the pomegranate seeds and oregano and finish with a drizzle of olive oil.

Serves 4.
