Soupe à tout

1 l beef or chicken broth + 1 l water (OR: 2 l water + 3 cubes of beef or chicken broth)
2 tbsp olive oil
1 onion
1 large potato
2 carrots
1 celery stick
1/4 or 1/2 bell pepper (red or green)
1 zucchini
Handful of mushrooms
1-2 garlic cloves
2 tsp tomato paste or 1-2 tomatoes
Optional: bacon, smoked pork sausage, 1 tbsp of ham broth, 1 tbsp of soy sauce

Fry the onions in olive oil. Add garlic and let fry for 1-2 minutes. Add all chopped vegetables and fry for 2-3 minutes. Add the liquid, tomato paste, and seasoning. Let simmer for approx. 20 minutes and add more water if so desired.
