Mediterranean Salad

Our take on this Once Upon A Chef Salad:

Dressing
1 cup chopped fresh parsley
Approx. 10 leaves fresh basil
1/4 tsp dried oregano
2 cloves minced garlic
1/4 cup red wine vinegar
3/4 cup olive oil
3/4 tsp salt
1/4 tsp ground pepper
1 1/2 tsp honey

Salad
Romaine lettuce
1 large red bell pepper (chopped)
1 cucumber (chopped)
1 carrot (peeled into ribbons)
Handful grape tomatoes
Handful pitted olives
Ricotta/feta
